To change the images to your own ones, just replace the .jpgs in the the images and thumbs folder with your own, making sure to keep the names the same and that the thumbnails correlate to the corresponding image, for example, thumb01.jpg is a thumbnail for pic01.jpg, thumb02.jpg is a thumbnail of pic02.jpg and so on.
Your thumbnail images need to be 50x50 px in order for the scrolling to work.
If you wish to change the background color, you need to change the background colour of the flash document (modify, document), as well as changing the color of the movieclip in the library named "bg" (this is in the gallery assets folder) to match your document background color.
